Florals for spring? How original. While blossom-based cocktails aren't new, there's a reason why they're so popular. After a winter spent sipping smoky, biting beverages, it's refreshing to get a whiff of something efflorescent—and that doesn't mean it has to be loaded with sugar.

Nicola Paganelli, owner of New York City Italian eatery Epistrophy crafted a cocktail that looks fancy, but is super easy to mix up. Simply shake up mezcal (the wellness crowd's favorite boozy choice), St. Germain, fresh lime juice, and a dash of rose water. Finish it off with a sprinkle of dried rose petals for a fresh, floral flair.

“The rosewater adds a subtle, soft note to the smokiness of the mezcal,” says Paganelli, adding that you can find it at Whole Foods, Trader Joe’s, or most other health food or Middle Eastern grocery stores. Otherwise, try making your own by simmering rose petals in water for 20 to 30 minutes (allow them to cool before using them). “You could even use some hibiscus tea, which also has a floral note to it,” says Paganell.
